I’m Maggie Doyle, and I write and test every recipe you’ll find on Quickly Recipes from my own kitchen in Portland. Not a test kitchen with three ovens and a camera crew — my actual kitchen, with a dog underfoot and usually a stack of dishes waiting by the time I get the shot I need.
How I Ended Up Here
I trained as a line cook in my twenties, spent a few exhausting years in restaurant kitchens, and eventually realized what I actually loved wasn’t the pace of service — it was the fifteen minutes before dinner, figuring out how to turn whatever was in the fridge into something worth sitting down for. Quickly Recipes grew out of that. Every recipe here has to pass one test: could I actually make this on a Tuesday, tired, with one pan to clean afterward?
What You’ll Find Here
Mostly weeknight dinners, a handful of breakfasts that don’t require getting up early, and the occasional recipe built around whatever’s trending that I’ve decided is actually worth your time — not just worth a headline. I test everything at least twice before it goes up, once as written and once with whatever substitutions I think you’ll actually want to make.
My Approach to a Recipe
I write instructions the way I’d explain them to a friend standing next to me — including the parts that usually get left out, like what the pan should smell like when it’s ready, or why a step matters more than it looks like it should. If a recipe needs a specific ingredient, I’ll tell you what actually works as a substitute, because I’ve usually tried it myself when I didn’t have the original on hand.
